Curry Honey Cashews-a simple, healthy snack for home or on-the-go.

wp_20160907_006-2As you progress in your journey towards better health, have you stopped for a moment to consider your snacks? In our household, we have a few recipes that are favorite “go-to’s”, and our Curry Honey Cashews are definitely one of them.

My husband grew up enjoying all of his favorite¬†snacks commonly found on grocery store shelves that came in every cookie cutter shape and color. I was more of a chips or ice cream girl, choosing different “flavors” depending upon my craving. But have you looked at the ingredients in those bagged and boxed selections, including many that are not meant to be eaten and often cannot pronounce?

When you make you own snack, you get to decide what ingredients you will use. And when you choose real food ingredients, you get to also enjoy the benefits from fueling you body with ingredients that your body recognizes and needs to run well. Just a few of the benefits tied to the ingredients in this cashew recipe include:

It only takes a few minutes to mix up this 3 cups of deliciousness from getting all your ingredients out to popping your tray in the oven and just 35 minutes later, you are pulling your tray of chewy cashews out of the oven that will get more crunchy as they cool. They are neat and easy to store or pack to go with you. I usually make them weekly and my husband packs some up for an easy snack at work.

Curry Honey Cashews

  • Servings: 4-6

A quick and easy treat from the Food & Living Coach


  • 1 Teaspoon coconut oil
  • 2 Tablespoons curry powder (no salt added)
  • 1 Teaspoon salt
  • 1 Tablespoon (heaping) honey
  • 2 Tablespoons water
  • 3 Cups Cashews


  1. Preheat oven to 250, and cover one edged baking sheet with parchment paper.
  2. In a medium bowl, thoroughly mix the top 5 ingredients, then add in the cashews and coat well with the seasoning mixture.
  3. Pour the cashews onto the parchment paper, and try to eliminate all stacked or grouped cashews.
  4. Roast in the oven for 35 minutes.
  5. Remove from the oven and let cool completely before moving them to a container.

Extras: -May I suggest local, raw honey -Non-irradiated curry with no salt added -Redmond Real Salt (fine) -Filtered water -Whole cashews -Organic whenever possible
